I work in a rural doctors' office. I had just put an elderly patient
in her room with her daughter. She was a little nervous because
she was seeing our doctor for the first time.
I had just gone into another room to clean it when Dr. M
went in and introduced himself.
Finally I heard him starting his exam.
The lady had some hearing impairment and I heard him
saying loudly, "DO YOU SMOKE?"

"No," a timid little voice answered him.

"DO YOU DRINK?" Dr. M asked her.

"No," she quietly replied. It was a little quiet for a moment
and I knew Dr. M was not used to this,
because even our elderly ladies seem to have been
smitten by his handsome looks and kind manner.

"DO YOU CHASE OLD MEN?" I heard him ask.

Immediately, the little lady perked up and snapped, "NOOOOOOOOOOOOO!"

I stopped what I was doing and covered my mouth to silence the giggles that was going to erupt.
Once again, when the visit was over out emerged another smitten patient.

Zucchini Brownies - submitted by Nora

2 cups grated zucchini
1 very ripe banana, mashed
2 tsp. vanilla
2 c. all purpose flour
3/4 c. sugar
1/3 c. cocoa powder
1.5 tsp. baking soda
1 tsp. salt
1 Tbls. water

Preheat oven to 350. Prep a 8x8 pan with cooking oil spray. Toss all ingredients together and mix well. Batter will be stiff. Spread in prepared pan. Bake 35 - 40 minutes, or until center sets. Allow to cool and cut. Moist, cake-like, no fat, and delicious!

Frog Spit - Submitted by Jean from NY

8 oz Cream Cheese
1 Container/Tub Whipped Cream
2 Small Pears
1 Cup Pear Juice
1 3oz package of Lime Gelatin Desert

Combine all ingredients (except pears) in a bowl and mix well. Add mixture and pears to a blender and puree until
mixed well. Do not over-mix. Add to a fun mold and chill 2 hours before serving.


Nurse’s Crock Pot Stew

Layer in crock pot – hardest ingredients on the bottom:
  • 4 Carrots, peeled – chuck or sliced
  • 2 Medium Onions, peeled – quartered
  • 4 Celery Stalks, chunk
  • 4 Potatoes, peeled or scrubbed – chunk
  • 1 lb. Stew Beef
  • 1 pkg Mushrooms, if desired, halved

2 tablespoons of Beef Boullion sprinkled on top of Mushrooms.
2 tablespoons of Gravy Master, sprinkled on top
2 cans Cream of Mushroom Soup – spread evenly on top
Don’t mix.

Cook on high for 6 hours or until vegetables are done.

*Note – add more or fewer veggies, if desired, and to the volume of your Crock Pot


Doctor’s Office Party Pinwheels

Combine with spoon:
  • Two 8-oz Pkgs Cream Cheese – softened
  • 1 envelope dry Ranch Dressing Mix
  • 4 tablespoons finely chopped Pecans
  • 3 tablespoons finely chopped Green Pepper
  • 3 tablespoons finely chopped Black Olives

Spread onto Flour Tortillas. Roll up Tortilla and slice into pinwheels. Refrigerate until ready to serve.

• Note – for the adventurous, add 1-2 tablespoons Pickled Jalapeno Peppers, finely diced.
Also, choose reduced fat cream cheese if desired.


Sassy Scrubs Apple Brown Betty
  • 2 cups cubed soft sliced bread – crusts ok
  • 2 tablespoons butter
  • 3 cups sliced apples
  • ½ cup sugar
  • ¼ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ cup water
  • 1 teaspoon lemon juice

Melt butter in pan and add bread crumbs to coat. Place 1/3 crumbs in buttered baking dish (9 x 13). Mix apple slices with remaining ingredients and add ½ this to baking dish. Alternate crumbs and apples, saving crumbs for the top. Bake at 375 degrees for 40-60 minutes. Serve warm with Hard Sauce (recipe below) or ice cream.

Hard Sauce for Sassy Scrubs Apple Brown Betty

1/3 cup butter
1 cup 10X Confectioner’s Sugar
1 teaspoon Vanilla

Mix with spoon, and chill sauce. It will become “hard”. Spoon over warm Betty.
(Try small spoonful first – sauce is sweet! YUM!)


Sassy Scrubs Cheese & Sausage Soufflé
  • 6 eggs, well-beaten
  • 2 cups milk
  • ½ teaspoon dry mustard
  • ½ teaspoon salt
  • 6 slices bread, cubed – crust ok
  • 1 lb. pan sausage, cooked and drained (microwave it if desired – I do!)
  • 1 cup grated cheddar cheese

Mix first 4 ingredients and set aside.
Combine egg and milk mixture with bread cubes and sausage.
Pour into buttered 9 x 13 inch baking dish.
Top with grated cheese.
Bake at 350 degrees for 45 minutes.

*Note: This is great for breakfast, brunch or dinner. And leftovers are wonderful!


Busy Nurse Tuna Burgers

Mix:
  • 6 ½ oz. can Tuna
  • 1 cup chopped celery
  • ½ cup cubed cheddar cheese (or cubed soft cheese like Velveeta)
  • 1 small onion, minced
  • ¼ cup mayo
  • Salt and Pepper as desired

Fill 6 Hamburger buns with mixture. Wrap each in foil and bake on cookie sheet for 15 minutes.
What a fun surprise to open for lunch or a quick dinner!

Note: You can substitute chopped chicken or turkey for tuna for a different taste.


Sassy Scrubs Beef Potato Casserole
  • 1 lb. ground chuck
  • ¼ teaspoon ground marjoram
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 3-4 medium potatoes, pared and thinly sliced
  • ½ cup thinly sliced onion
  • ¼ cup finely chopped green pepper
  • 1 (14 ¾ oz) can beef gravy

Crumble ground chuck into 2 qt. glass casserole. Cover and microwave at high for 5 minutes or until meat loses its pink color – stirring after 3 minutes. Pour off fat.

Season meat with marjoram, salt and pepper. Arrange ½ potato slices on top of meat. Top with onion and green pepper, then rest of the potatoes. Pour gravy overall. Do NOT stir.

Cover and microwave 15-18 minutes or until potatoes are tender. Rotate dish ¼ turn every 5 minutes if you do not have a turntable in your microwave. Let stand 5 minutes before serving. Serves 4-5. Add a green veggie or a salad, and you’ve got dinner!
